  3. 1 tbsp Garlic, ginger paste
  4. 1 tbsp gandhoraj lemon juice
  5. 1 gonghoraj lebu / kaffir lime
  6. 1/2 tsp lemon zest
  7. 5-6 gondhoraj / kaffir lime leaves
  8. 4-5 potatoes cuts into half & fried
  9. 1 chopped tomato
  10. 2 green cardamom pods
  11. 1/2 inch cinnamon stick
  12. 3-4 cloves
  13. 1 bay leaf
  14. 5-6 tsp kashmiri red chilli powder
  15. 2 tsp turmeric powder
  16. 2 tbsp mustard oil
  17. 3-4 green chillies(slitted)
  18. as needed Salt
  19. 1/4 tsp sugar
  20. 1/4 tsp curd
  21. 1 tsp ghee / clarified butter

Instructions to make to make Gandhoraj Chicken/Murgi(Kaffir Lime flavoured Chicken Curry)

  1. Wash the chicken properly, marinate it with salt, turmeric powder,1 tbsp garlic- ginger paste, 1/2 tbsp kaffir lime juice & 1/2 tsp kaffir lime zest.
  2. Heat mustard oil & ghee on a wok.When the ghee is fragrant temper it with cinnamon, cardamom, cloves, bay leaf.
  3. Add sliced onions & fry it till golden. Then add 1 chopped tomato, red chili powder,1 tsp curd, sprinkle little water & stir well.
  4. Add garlic, ginger paste, salt, turmeric powder, sugar & cook till the oil separates.
  5. Add the marinated chicken, fried potatoes, cover. with a lid & cook till the chicken is completely done.
  6. Then open the lid, add 1/2 tbsp gondola lebu/ kaffir lime juice,1/2 tsp lemon zest & mix well. Switch off the flame.
  7. Put the gondhoraj / kaffir lime leaves over the chicken dish & cover it for 10 mints, so that the flavour of gondhoraj gets into the chicken.
  8. Serve the gondhoraj chicken preferably with hot steam basmati rice, drizzling some kaffir lime juice on top of the chicken before serving.
